SUMMER’S HOME (Fruit Bowl)

It is officially the start of summer in Londres! *woop woop*. Unfortunately it looks nothing like it though, it’s all rain and grey clouds as per usual of my favourite city *sigh*. I guess this is going to be another 3 months of creating summer rather than actually having one. So, lets start with this gorgeous summer fruit bowl. HEALTHY BREAKFAST MEALS!

Morning guys! If you follow me on Instagram then you’ll know I’m starting #HealthyUnder20! I’ll explain, healthy under 20 is basically a bunch of healthy breakfast, lunch, dinner and snack recipes and ideas that you can have ready in 20 minutes and under! Happy Tuesday *taps dances*. Do you suffer from major rice wastage? Always having to chuck the leftovers in the bin? Look no further! Here’s a quick and easy solution on how to make the most of your rice. So, the other day I was hunggrrryyy, I mean hungry! The only thing in my fridge was rice from last night.  I had to make some magic with it or starve! Hey everyone! Welcome back to Genie In The Kitchen. I know I’ve been a bit AWOL lately (it’s due to my previous post)  but anyway, I’m back with some major food porn..*drum roll please*.. Mexican nachos with cheese, chicken, chilli and avocado salsa. How amazing does that sound? It sure tastes it too. It’s one of those dishes that you just can’t stop eating. Delicious is an understatement! There was a lot of elbowing going on when I put this on the dinner table. Get the recipe for this fiery Mexican down below: Serves 5 Ingredients: 1/2 a chicken (cooked) 1 bag of tortilla chips 1/4 of a large onion (chopped) 2/3 of a medium red onion (chopped) 1 cup of mozzarella cheese 3 medium tomatoes (chopped) 1 lemon 2 avocados (peeled ad chopped) 1 bunch of chopped parsley 4 chillies (chopped) 2 tbsp of habenero chilli flakes Method: 1) Put tomatoes, onions, parsley and avocados into a blender. EASTER EGG CUPCAKES !

When chocolate is plastered everywhere and on everything, you know what time it is, Easter! I’m personally not a fan of the huge chocolate eggs (it makes my teeth hurt) . However, I do like chocolate butter-cream and cupcakes and mini eggs and Smarties. So I figured I’d share my Easter egg nest cupcake recipe. They’re super moist and very, very simple to make and absolutely adorable! Ingredients  1 cup of self-raising flour 1 cup of sugar (granulated or caster) 100g of Stork 3 medium eggs 1 tsp of vanilla extract 1 tsp of baking soda. GRILLED MACKEREL & SWEET POTATO SALAD

Hey guys! Hope you’re all having a fab start to the week. Today I’m sharing a fantastic healthy recipe with you (yes I said healthy. can you believe that!) This mackerel and sweet potato salad is perfect for you weight watchers or  for those of you who’d like to eat a little lighter. Good Friday’s coming up (you’re not supposed to eat meat on good Friday) and this dish will make a great meal for all to enjoy. Remember, healthy food is only boring when you make it boring. I love making my healthy meals colourful and usually include chicken, meats or potatoes.

BECAUSE OREOS TASTE GOOD IN EVERYTHING

Pancakes are one of the best breakfasts! Am I right or am I right? They’re so quick to make, they’re sweet and they’re fluffy. If you’ve been with Genie in the Kitchen for a while you’ll know I’m slightly obsessed with Oreos. I’m a major Oreo enthusiast! So today I decided to play a little and added crumbled Oreos into my pancake mix. Absolutely amazing guys, you have to try it! Watch the video to see exactly how I make it here. Ingredients  5 Oreos 2 1/2 cups of self-raising flour 2 medium eggs 1/2 a cup of sugar 1 1/2 cup of milk (semi-skimmed or whole) 1 tsp of vanilla extract 1/4 cup of sunflower oil Method 1) Crush the 5 Oreos. (I put them into a plastic bag and crushed them with a rolling pin)  2) Place the flour into a bowl and add in the crushed Oreos. ‘AV A BREAKFAST MUFFIN!

It was brought to my attention by one of my lovely subscribers on YouTube that I really don’t post that many breakfast recipes, after snooping around my blog I realised she was 100% right. When it comes to breakfast I love eating foods that will fill me up right until lunchtime. This breakfast muffin is perfect for that, with the eggs, bacon and spinach providing you with that fuel for the morning rush, you’ll definitely be able to survive all morning on it! It’s also a breakfast that works well with different diets. For example, if you’re trying to eat less fat take out the cheese and bacon, instead butter the muffins  (with a light butter) and only include the eggs and spinach in your sandwich with a sauce (low in fat of course) of your choice.

THE BEST CHICKEN SALAD!

Why is it salads are known as a “boring dish”? or something you only eat when you’re on a diet?  I love a good salad! I guess it all stems back to being a child, when my mum said salad, it was those dry packaged ones you get in the supermarkets. Slightly traumatised, I avoided salad at every opportunity. Since I’ve been exploring food I realised salads can be the most beautiful, quick and delicious dish you can make. Best of all, when making salad you never ever make a mistake! Ingredients  4 cooked and chopped chicken thighs 2 large bread wraps 1 cup of grated carrots 6 medium tomatoes 1 lemon 3/4 of a cucumber 3/4 of iceberg lettuce A salad dressing.
