This mackerel and sweet potato salad is perfect for you weight watchers or for those of you who’d like to eat a little lighter. Good Friday’s coming up (you’re not supposed to eat meat on good Friday) and this dish will make a great meal for all to enjoy. Remember, healthy food is only boring when you make it boring.
