Hey everyone! Welcome back to Genie In The Kitchen. I know I’ve been a bit AWOL lately (it’s due to my previous post)  but anyway, I’m back with some major food porn..*drum roll please*.. Mexican nachos with cheese, chicken, chilli and avocado salsa. How amazing does that sound? It sure tastes it too. It’s one of those dishes that you just can’t stop eating. Delicious is an understatement! There was a lot of elbowing going on when I put this on the dinner table. Get the recipe for this fiery Mexican down below: Serves 5 Ingredients: 1/2 a chicken (cooked) 1 bag of tortilla chips 1/4 of a large onion (chopped) 2/3 of a medium red onion (chopped) 1 cup of mozzarella cheese 3 medium tomatoes (chopped) 1 lemon 2 avocados (peeled ad chopped) 1 bunch of chopped parsley 4 chillies (chopped) 2 tbsp of habenero chilli flakes Method: 1) Put tomatoes, onions, parsley and avocados into a blender. On the 30th of December 2014 I quit my job at Topshop Oxford Circus to chase a dream I’ve waited so long for, that’s to run my own cookie business. Good morning beautiful people! Hope you’re all well. The week is almost over! Yasssss. It’s been such a busy week for me, I’m absolutely knackered!!! It’s been super productive though, so  I guess the bags under my eyes are kind of worth it. So anyway lets get back on topic! I’d like to share with you 5 ways to set yourself up for a great day. Over the past few years I feel I’ve learnt how to  master my days and really get s***t done with a few little changes. Festival season is approaching! Okay, so festivals are a big thing in the UK from around June – August there’s festivals non stop. It’s my favourite time of the year, sunnys, denim shorts, sun hats music and best of all GREAT FOOOOODD! Here’s a list of some of the best food festivals going on in summer 2015! When chocolate is plastered everywhere and on everything, you know what time it is, Easter! I’m personally not a fan of the huge chocolate eggs (it makes my teeth hurt) . However, I do like chocolate butter-cream and cupcakes and mini eggs and Smarties. So I figured I’d share my Easter egg nest cupcake recipe. They’re super moist and very, very simple to make and absolutely adorable! Ingredients  1 cup of self-raising flour 1 cup of sugar (granulated or caster) 100g of Stork 3 medium eggs 1 tsp of vanilla extract 1 tsp of baking soda.
