Hey guys! Hope you’re all having a fab start to the week. Today I’m sharing a fantastic healthy recipe with you (yes I said healthy. can you believe that!) This mackerel and sweet potato salad is perfect for you weight watchers or  for those of you who’d like to eat a little lighter. Good Friday’s coming up (you’re not supposed to eat meat on good Friday) and this dish will make a great meal for all to enjoy. Remember, healthy food is only boring when you make it boring. I love making my healthy meals colourful and usually include chicken, meats or potatoes.

-1 cleaned mackerel (you can get them to do this at your local butchers).
– 1 tbsp of salt
– 1 tbsp of all purpose seasoning
– 1 tbsp of sunflower oil
– 1 sliced lime

For the sweet potatoes:-
– 3 peeled and chopped sweet potatoes
– 1 tbsp of dried thyme
– 1 tbsp of salt
– 2 tbsp of sunflower oil

For the salad:-
-Spinach (optional amount)
-Bowl of cherry tomatoes (amount optional)

METHOD – Watch video on my YouTube channel if you’d prefer to watch. 

For the fish:-

1) Rub 1 tbsp of salt into fish.

2) Rub 1 tbsp of all purpose seasoning into fish.

4) Put chopped lime into cut side of fish. (Along the mouth to tail).

5) Drizzle sunflower oil over it and place in oven for 40 minutes.

Sweet Potatoes:- 

1) Put chopped sweet potatoes into bowl.

2) Pour 2 tbsp of olive oil over potatoes.

3) Place in dried thyme and salt and massage with hands.

4) Place the potatoes on oven tray and put in oven for approx 30 – 35 minutes.

You can place the potatoes in the oven the same time as the fish, just make the potatoes are on top. 

For the salad:- 

1) Chop cherry tomatoes into halves.

2) Lay spinach onto serving dish.

3) Line the tomatoes along the side of the dish.

4) Line sweet potatoes with tomatoes.

5)  For the finishing, place mackerel on top.
