Hey guys! So today I want to talk about passion. I’m a true lover of life, I honestly think life’s one of the most beautiful gifts. I guess I’m a bit of a flower child, I believe everyone should do what they love and love what they do, with that comes true happiness and a life of no regret.  There’s a quote that goes “I’d rather look back on life and say ‘I can’t believe I did that’ than ‘I wish I’d did that’.” I love it! Too many people fear chasing their dreams, they worry too much, it’s all ‘how am I going to pay the bills?’, ‘What will my parents say?’ What if things don’t go well?’.  You’ve got to go for it with every single ounce of energy you have. GRILLED MACKEREL & SWEET POTATO SALAD

Hey guys! Hope you’re all having a fab start to the week. Today I’m sharing a fantastic healthy recipe with you (yes I said healthy. can you believe that!) This mackerel and sweet potato salad is perfect for you weight watchers or  for those of you who’d like to eat a little lighter. Good Friday’s coming up (you’re not supposed to eat meat on good Friday) and this dish will make a great meal for all to enjoy. Remember, healthy food is only boring when you make it boring. I love making my healthy meals colourful and usually include chicken, meats or potatoes.

BECAUSE OREOS TASTE GOOD IN EVERYTHING

Pancakes are one of the best breakfasts! Am I right or am I right? They’re so quick to make, they’re sweet and they’re fluffy. If you’ve been with Genie in the Kitchen for a while you’ll know I’m slightly obsessed with Oreos. I’m a major Oreo enthusiast! So today I decided to play a little and added crumbled Oreos into my pancake mix. Absolutely amazing guys, you have to try it! Watch the video to see exactly how I make it here. Ingredients  5 Oreos 2 1/2 cups of self-raising flour 2 medium eggs 1/2 a cup of sugar 1 1/2 cup of milk (semi-skimmed or whole) 1 tsp of vanilla extract 1/4 cup of sunflower oil Method 1) Crush the 5 Oreos. (I put them into a plastic bag and crushed them with a rolling pin)  2) Place the flour into a bowl and add in the crushed Oreos. I love reading about individuals that are successful in my chosen field. It’s always interesting to see who has the most £££££ (In this case I should probably add more pound signs) of them all. Are Starbucks Doing Deliveries In London?

The answer to this is yes. Postmates, (the company that will be collaborating with Starbucks on this new venture) confirmed on their website, stating ” We are excited to announce a collaboration with Starbucks that offers customers the ultimate convenience: food and beverage ordering through the Starbucks® mobile app with delivery by Postmates. Working together, we will enable Starbucks customers to order their favorite Starbucks products and have it delivered to them without leaving their home or office.” So, I’m actually excited about this, who wouldn’t want a caramel frappuccino with whipped cream at their door through the click of a button? As they said, this is the ultimate convenience. However, practically thinking it does raise a few concerns. Most Starbucks are located in Central London, which is the busiest part of London. However Postmates deliver the product they will essentially be stuck in traffic which will only result in cold coffee unless they come up with some type of heating system. ‘AV A BREAKFAST MUFFIN!

It was brought to my attention by one of my lovely subscribers on YouTube that I really don’t post that many breakfast recipes, after snooping around my blog I realised she was 100% right. When it comes to breakfast I love eating foods that will fill me up right until lunchtime. This breakfast muffin is perfect for that, with the eggs, bacon and spinach providing you with that fuel for the morning rush, you’ll definitely be able to survive all morning on it! It’s also a breakfast that works well with different diets. For example, if you’re trying to eat less fat take out the cheese and bacon, instead butter the muffins  (with a light butter) and only include the eggs and spinach in your sandwich with a sauce (low in fat of course) of your choice.

THE BEST CHICKEN SALAD!

Why is it salads are known as a “boring dish”? or something you only eat when you’re on a diet?  I love a good salad! I guess it all stems back to being a child, when my mum said salad, it was those dry packaged ones you get in the supermarkets. Slightly traumatised, I avoided salad at every opportunity. Since I’ve been exploring food I realised salads can be the most beautiful, quick and delicious dish you can make. Best of all, when making salad you never ever make a mistake! Hope is one of the greatest things we can have in this world. Whether you’re hoping for change, a job, children. Whatever type of adversity you’re facing hope is the only thing that’ll get us through it. It’s so easy to lose hope when we’re facing a difficult situation, giving up is always easy but I don’t want you to do that! A LITTLE GOES A LONG WAY (Mini Oreo Cheesecake)

 Who doesn’t love Oreos!?  For years I refrained from eating Oreos, I always felt the biscuit was too black and the cream too white (I’m so weird, I know) . Now  I can’t get enough of them! In brownies, cakes, milkshakes bring it on! My latest Oreo favourite is this mini cheesecake. Once you’ve tried this you’ll never go back to your basic cheesecake again!
